In this course, we will take you into the harmonious world of Tardivo di Treviso, endive, Radicchio di Castelfranco, and many more. We will show you the flavors you can extract from these bitter salads and combine them with citrus fruits.
The evening will be guided by Peter Lehner. He is not only a long-time Sous Chef at TIAN but also the head chef of our Pop-Ups TIAN Staff Food & TIAN am Berg in Zürs am Arlberg, where he and his team earned 15.5 Gault&Millau points and 3 toques. Together, you will create a unique vegetarian-vegan menu, and Peter will share his tips and tricks for cooking at home.
