For this exceptional jus, we use only Tartufo Nero Pregiato (Périgord truffle) because, for us, it is simply the best black truffle variety for flavorful sauces. Especially from January to mid-March, the truffle's aroma is at its peak, and the quality is unmatched.

It pairs perfectly with polenta, winter vegetables such as cabbage or pointed cabbage, and much more.
