Forellenschluß-Miso from "Wiener Miso"

Miso is a fermented seasoning paste used for flavoring and salting dishes. Its origins lie in Japan. Our partner “Wiener Miso” refines it with regional ingredients to create a new taste experience.

The Forellenschluß Miso was developed together with us a few years ago and made from the old lettuce variety Forellenschluß. According to Sirkka from Wiener Miso, it remains one of her favorite miso pastes to this day.

The story.
Originally, the paste was created from the Forellenschluß lettuce leaves that were left over in our kitchen. But since the flavor is so unique and we wanted to use more of it, Forellenschluß is now ordered directly from Robert at Krautwerk. Processed into a seasoning sauce, the lettuce now finds its way not only into our menu but also into our online shop.

Why do we love “Wiener Miso”?
The ingredients come 100% from Austria and Northern Italy and are 100% organic & DEMETER-certified. Many ancient grain varieties and old types of legumes are used. This supports farmers in the region in doing the right thing for our soils and preserving biodiversity. Thanks to short delivery routes, Wiener Miso products have virtually no CO2 footprint, and the company operates with 99% waste-free production.
